Nutrition Education for New Americans Project: Basic information on nutritional needs. Interesting in that it provides a number of "ethnic" alternatives that show useful nutritional alternatives.
Worm's Way: Space homesteads will be a bizarre combination of rural and urban living concepts. Interior space is at an extreme premium, and the intensive techniques described here can be of help. This site includes source information as well as sales on intensive hydroponics, composting, and other tasks of special interest to indoor agriculture.
Choosing a deep cycle battery for solar or backup power: Batteries are just as important for "off-grid" living on Earth or in Space. This page has an in-depth comparison of different deep cycle batteries which can be used for buffering power from solar or wind-power systems.

Composting Toilets: Water is a precious resource in space (one the Moon, it's absolutely critical -- perhaps more so than air). So it makes sense to consider low-water or water-free solutions for sanitation and bio-cycling.
